Paleo Summer Nights
Here in Colorado, it is so nice to sit outside during the summer and enjoy a delicious, healthy & Paleo friendly dinner. Here is what we did last night. It was delicious, full of healthy fats and tons of phytonutrients (plant nutrients.)
Here you go:
*8 ounces of salmon – salt/pepper and a little fresh lemon juice. Put on grill at medium heat for 8-10 minutes. Squeeze a little more lemon juice on before serving.
*Kale salad with cut cucumbers and carrots. EVOO and red wine vinegar for dressing.
*Roasted Cauliflower – Rough cut a head of cauliflower. Sprinkle turmeric, garlic salt and pepper. Roast at 375 degrees for 20-25 minutes.
There you have it. Delicious, filled with healthy fats, tons of phytonutrients and very filling. You will love this dinner. Enjoy with a big glass of purified water, and it doesn’t get much healthier than that.
