Delicious Paleo Rings
I cannot think of better appetizer or afternoon snack than biting into a crunchy and flavorful onion ring. Of course, the traditional way onion rings would be prepared is to use some sort of wheat-flour batter and fry it up in cancer-causing vegetable oil.
Well, now you can have one of your favorite little snacks back, but with a much healthier twist to it. Onions are very powerful antibacterial foods (just like garlic), and we need to be finding more and more ways to get them into our diet. Hope you guys enjoy the recipe and your 1st batch of Paleo Rings!
*2-3 Large white onions (depending on how many rings you want to make)
*3 cups almond flour
*2 tablespoons of turmeric
*4 tablespoons of coconut oil
Peel onions and pull into rings. Scramble the eggs into one bowl, while adding the coconut flour into another bowl with the turmeric. Mix the turmeric evenly into the coconut flour. Put a skillet on the stove-top at medium heat and melt the coconut oil evenly throughout the pan.
This next part may get a little messy. Take one ring at a time and do the following. Put a ring into the coconut flour and coat both sides, then transfer the ring to the egg wash and evenly coat both sides; put back into coconut flour and coat both sides evenly again and then gently place into your hot pan. Cook both sides for about 4 minutes or until it has a nice golden brown look to it. Repeat this for each ring and you are ready to serve.
