Buffalo CrockPot Tacos 

For busy & working families, CrockPot dinners are an easy way to stay healthy and keep on a Paleo Lifestyle.  Below is one of our favorites – Buffalo Tacos!!  We usually top a bed of greens with this recipe and it makes for a delicious, filling meal.  Hope you enjoy!

Ingredients

2 pounds ground buffalo meat

1 yellow pepper chopped

3-4 carrots chopped

1 small red onion chopped

1 small sweet potato chopped

2 cloves of garlic chopped

1 Anaheim pepper chopped

About 10 cherry tomato’s chopped in half

1 Tablespoon of each of the following

      Cumin, turmeric, garlic powder, salt, pepper, cayenne pepper, chili powder

Directions

Throw it all in the crockpot in the morning before work; by the time you get home you can enjoy an easy, healthy Paleo meal.  You can eat it all alone in a bowl, or better yet, throw it on top of a bed of greens.
