Paleo Chocolate Chip Cookies with Coconut Flakes
These cookies are an Easy, Paleo, Gluten Free little snack for your kids that taste delicious without all the junk and artificial ingredient of store bought cookies.
3/4 cup unsalted creamy almond butter
1/2 cup organic coconut sugar
2 tablespoons melted coconut oil
2 eggs (organic-free range always)
1/4 cup coconut flour
1/2 teaspoon baking soda
1/4 teaspoon salt (pink Himalayan sea salt as always)
1/3 cup dairy free/soy free dark chocolate chips – Hard to find chocolate chips without soy lecithin but check at your local Whole Foods.
½ cup coconut flakes
- Preheat oven to 350 degrees. In a bowl, add in almond butter, coconut sugar and coconut oil; mix or use a food processor until all ingredients come together. Add in eggs and mix/process again until all ingredients come together.
- Next, add in coconut flour, baking soda and salt; mix again until the dough is formed and then add in your “healthy” chocolate chips.
- Scoop dough into individual balls and place on cookie sheet.
- Bake for 8-10 minutes or until done. As soon as you take them out, sprinkle a few coconut flakes on top of each warm cookie. Let cool and ready to enjoy this extremely healthy snack. Repeat for the rest of the dough.
