Crust-less Paleo Quiche

This dish is one of our favorite Sunday morning breakfasts. This breakfast is delicious and healthy that the entire family will enjoy. Feel free to add in different vegetables such as red bell peppers, kale, or scallions. You can also add in bacon to this dish as well for added flavor and texture. If it is a cheat day for you, top your quiche with feta cheese for more flavor!!

Ingredients
*2 tablespoons Coconut oil
*6 Large Organic Eggs
*1/4 cup coconut milk
*1 1/2 Cup of finely chopped spinach
*1 Cup diced mushrooms
*1/4 Cup red diced onion
*Sea salt/Pepper to taste

Directions
Preheat oven to 350 degrees.

Heat skillet over medium heat and add 1 Tbs of your coconut oil; after skillet is coated, add mushrooms and onion. Cook down for about 2-3 minutes and then add chopped spinach for another minute. Take all cooked ingredients and put in a separate bowl.

Whip eggs and coconut milk together in another bowl. After eggs & coconut milk are whipped together, add the cooked ingredients into that bowl. Put in a dash of sea salt and pepper to your liking at this point. Coat skillet again with remaining coconut oil and add everything back into skillet.

Bake at 350 degrees or until top turns golden brown. Let cool and serve.
