Paleo Chicken Thigh Soup (Crock-Pot Style)

This recipe is a super easy, convenient and totally healthy meal for your family. Put in a quick 10 minutes of prep time in the morning and when everyone gets home after school/work, you will have a health promoting and delicious meal that the entire family can enjoy.

I am purposely posting this recipe in early November because there are so many anti-flu ingredients that go into this simple recipe!! If you or anyone in your family feels the flu or a cold coming on, get out your crock pot immediately and get a batch of this soup ready.

Ingredients
*5 organic chicken thighs with skin removed
*Enough chicken stock (organic) to fill your crock pot 3/4 of the way.
*6 Carrots peeled and chopped
*6 Stalks of celery chopped
*1 small red onion diced
*4 cloves of garlic finely chopped
*2 Cups of chopped Kale
*1 Cup of chopped Cilantro
*1 Jalapeno diced
*2 tbs of Turmeric
*2 tbs of garlic salt
*2 tbs coriander seed
*Salt/Pepper to taste

Directions – Dump all ingredients (minus the cilantro) into the crock pot before you leave for work in the morning. Set the crock pot on low heat and let the soup simmer all day long. When you get home, it is ready to serve. Just add a few pinches of chopped cilantro on top of each bowl and enjoy an easy & healthy dinner!
