Cilantro Lime Scallops with Asparagus Tips
Are you looking for a super easy, super clean, super healthy holiday meal over the next couple weeks for you and your loved ones. Forget about all the garbage we are putting into our mouths this holiday season, and do yourself a favor and prepare this delicious meal that I just prepared for my family. It only takes a few ingredients and you can literally have it on the table in 10 minutes.
Ingredients – Feeds 4 people
*2 Tbs of coconut oil
*1 bundle of organic Asparagus
*2 Tbs of olive oil
*1 big handful of cilantro
*3 garlic cloves
*Extra Virgin olive oil
Add all Cilantro-lime sauce ingredients into a Vitamix or food processor and blend together until you get a thin liquid consistency.
Heat a skillet on medium heat, add coconut oil and scallops. Cook scallops on each side for approximately 3 to 5 minutes.
Cut off Aspagaus tips and steam tips for 4-5 minutes. Once cooked add a little salt/pepper and olive oil.
Plate all ingredients and you have a simple paleo meal for you and your family. Cilantro is a great detoxifier for all the crap we put into our body’s over the holidays. Scallops are a great source of clean protein and healthy fats, and we all know the cancer fighting properties of asparagus.
