Chicken Fried Rice – Paleo Style

*1 lb organic/free range chicken
*1/4 cup coconut aminos
*3 diced garlic cloves
*1 large head of cauliflower – grated
*4 tablespoons of coconut oil
*1 tablespoon of turmeric
*1/2 orange pepper – thinly sliced
*1 cup peas
*3 eggs
*1/4 red onion diced
*2 green onions – chopped
*2 tablespoons of organic/free range butter – my personal favorite is Kerrygold
*1 tablespoon garlic powder
*1/4 cup chopped cilantro
*salt & pepper

Grate cauliflower to the size of rice into a bowl. Chop the chicken into small cubes and season with turmeric, garlic powder, salt & pepper. Place 2 tablespoons of coconut oil and 2 tablespoons of coconut aminos in hot skillet and add chicken, garlic, peas, orange pepper, and red onion. Cook for 5-7 minutes or until chicken is thoroughly cooked and put all ingredients into a bowl.

Put skillet back on medium heat and add remaining coconut oil. Add your cauliflower rice to skillet along with remaining coconut aminos. Cook for 2 minutes while stirring constantly. After your cauliflower rice is hot and evenly coated with coconut aminos, make a well in the center of skillet and add eggs. Scramble the eggs and then stir evenly throughout the cauliflower rice. Incorporate your cooked chicken, garlic, peas, orange pepper and red onion back into skillet and mix evenly.

Finally, add butter to skillet and mix in. Place your final product in a serving bowl and top with cilantro and green onions. Salt & pepper to taste and you are ready for an amazingly healthy and delicious meal.
