Healthy Lamb Roast


Lamb Roast


*Leg of Lamb

*2 Lemons

*10 Garlic Cloves

*4 tablespoons of Oregano

*3 Carrots Chopped

*2 Celery Stalks Chopped

*3 Large Potatoes Chopped

*1/2 Red onion Chopped

*Salt & Pepper

*Extra virgin Olive oil


Preheat oven to 350 degrees.

Put lamb in roasting pan and squeeze juice of one lemon over lamb.  Also drizzle olive oil over lamb.  With your hands, coat lamb with oregano, salt and pepper.  Place garlic, celery, potatoes, carrots and red onion evenly throughout pan.

Place roasting pan in oven for 45 minutes.  After 45 minutes, take pan out and squeeze juice of 2nd lemon all over lamb and vegetables.  Drizzle a little bit more olive oil over pan as well and stir vegetables around.  Put back in oven at 350 degrees for another 45 minutes or until meat thermometer register at 145 degrees.  Remove pan from oven and let rest for 10 minutes and you will be ready to serve.
